Jackfruit Curry

Ingredients

  • 100g of dried Jackfruit
  • 1/2 chopped onion
  • 1-2 chopped green chilli
  • Curry leaves
  • Pandan leaves (optional)
  • 2 tsp turmeric powder
  • 4 tsp curry powder
  • 1 tsp fenugreek seeds
  • Salt
  • 120 ml thick coconut milk + 250 ml watery coconut milk (“”Diya kiri)
  • Garlic
  • 1 tsp mustered seeds
  • 1-2 tsp black pepper seeds

Method

  1. Soak dried jackfruit pieces in lukewarm water for about 1 hr until the pieces become tender
  2. Wash and drain well
  3. Add watery coconut milk, onion, green chilli, curry leaves, pandan leaves, turmeric and curry powder, fenugreek seeds and salt
  4. Simmer on medium heat for 20-25 mins.
  5. Separately, make a paste with Garlic, Mustard, and black pepper.
  6. Once the jackfruit is tender, add the paste and tick coconut milk to it.
  7. Cook for another 10 mins on medium heat.
  8. Serve hot with rice.
